Virgo Pistachio Pots de Crème


• 1/4 cup Water

• 3 Tbs Corn Starch


Whisk and set aside.


PISTACHIO MILK

• 1 cup water

• 1/2 cup unsalted shelled pistachios


In Vitamix blend on high for 2 minutes until completely smooth.


• above made pistachio milk

• 1/2 cup sugar

• 1/8 Tsp Salt


Whisk in a sauce pan until it boils.


Stir in 1/4 cup semisweet dairy-free chocolate chips, until completely smooth. Drizzle cornstarch mixture into sauce pan and whisk continuously for about 4 minutes. •

Pour into small cups, smooth the tops, let cool for 10 minutes and chill overnight in the fridge.


Top with homemade Coconut Whipped Cream and then savor every single bite.
