Scorpio Raw Chocolate Pie


CRUST

• 1 cup pitted dates

• 1 cup almonds

• 1/3 cup walnuts

• 1/3 cup cacao powder

• 1 Tbsp water

• 1/8 Tsp salt

Combine and mix in Vitamix. Place on coconut oil greased 8.5" spring form and press firmly into the pan. Freeze for 3-4 hours.


FILLING

• 1 pack firm tofu

• 1 1/3 cups chocolate chips, melted

• 3 Tbsp pure maple syrup

• 2 Tbsp almond or coconut milk

• 2 Tsp cacao powder

• 1 Tsp pure vanilla extract

• 1/8 Tsp salt

Combine in Vitamix. If needed add 1 Tbsp melted coconut oil for smoother texture as every tofu brand will come out differently. The coconut oil usually smooths it out.

Pour filling onto crust and refrigerate uncovered for a few hours.
