Preheat oven to 350F.
CAKE
In a bowl mix:
• 2 cups flour
• 1/2 cup sugar
• 1 1/2 Tbs baking powder
• 1/4 Tsp baking soda
In food processor mix:
• 5 fresh strawberries
• 1 cup non-dairy milk
• 1/2 cup olive oil
Pour wet ingredients into dry and mix gently. Pour into coconut-oil-coated cake tray. Bake for 20min.
FILLING
In separate bowl mix:
• 1/4 cup non-dairy milk
• 1/4 cup corn starch
Whisk and set aside
In food processor mix:
• 1 can coconut milk - without the water
• 1/2 cup sugar
• 5 fresh strawberries
Place mix in saucepan on medium heat until it boils. Reduce heat and slowly drizzle in cornstarch mix. Whisk continuously until it’s thick like pudding. Remove from heat and let cool.
Now, cut the cooled cake in half, spread filling on bottom part, slice fresh strawberries and place all over. Cover with top half.
ICING
• 1 cup powdered sugar
• 4 Tsp water
Cool cake completely before icing.
Garnish with a big ass Strawberry
